Anybody who has ever heard of macarons knows most likely also Ladurée. Until recently I even believed only Ladurée was able to make these heavenly tasting pastries. Obviously I was wrong, but I did not know until I tried Pierre Hermé macarons. What makes Pierre's macarons so special? He offers over 250 different tastes. He is a true artist and very particular about his macarons: ‘The outside must be a very thin, crisp layer with an inside that is moist and tender. The flavours are very precise. The texture is very physical – sometimes I put small pieces into the filling so you can see, feel and taste. The macaron Celeste has two fillings.'
Few of Pierre's special tastes. No wonder French Vogue magazine named him "The Picasso of Pastry."
My very first Pierre Hermé macaron box.
